Delicious Low-Carb Lasagna with Ground Meat

Ingredients

  • 1 lb ground beef or turkey
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce (low-carb)
  • 3 medium zucchini (sliced lengthwise)
  • 2 cloves garlic (minced)
  • 1 medium onion (chopped)
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients:
    • Preheat your oven to 375°F (190°C).
    • Slice the zucchini lengthwise into thin strips.
  2. Cook the Meat:
    • Heat the olive oil in a large skillet over medium heat.
    • Add the chopped onion and minced garlic, sauté until translucent.
    • Add the ground meat, cook until browned. Season with salt, pepper, dried oregano, and basil.
    • Stir in the marinara sauce, reduce heat and let simmer for 10 minutes.
  3. Assemble the Lasagna:
    • In a baking dish, spread a thin layer of the meat sauce.
    • Add a layer of zucchini slices.
    • Spread a layer of ricotta cheese over the zucchini.
    • Sprinkle with mozzarella cheese.
    • Repeat the layers until all ingredients are used, finishing with a layer of meat sauce and a generous topping of mozzarella and Parmesan cheese.
  4. Bake:
    • Cover the baking dish with aluminum foil.
    • Bake in the preheated oven for 25 minutes.
    • Remove the foil and bake for an additional 20 minutes, until the cheese is bubbly and golden brown.
  5. Serve:
    • Let the lasagna cool for 10 minutes before slicing.
    • Serve warm and enjoy!
