Delicious Vegan Blueberry Oatmeal Bars

Ingredients:

  • 2 cups fresh blueberries
  • 2 cups rolled oats
  • 1 cup almond flour
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 tbsp lemon juice
  • 1 tbsp cornstarch

Instructions:

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mix oats, almond flour, cinnamon, and salt.
  3. Add melted coconut oil, maple syrup, and vanilla extract to the dry ingredients. Mix well.
  4. Press 2/3 of the oat mixture into the prepared baking pan.
  5. In another bowl, gently toss blueberries with lemon juice and cornstarch.
  6. Spread the blueberry mixture evenly over the oat base.
  7. Sprinkle the remaining oat mixture over the blueberries.
  8. Bake for 25-30 minutes, until the top is golden brown.
  9. Allow to cool completely before cutting into bars.
