Instructions:
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a large bowl, mix oats, almond flour, cinnamon, and salt.
- Add melted coconut oil, maple syrup, and vanilla extract to the dry ingredients. Mix well.
- Press 2/3 of the oat mixture into the prepared baking pan.
- In another bowl, gently toss blueberries with lemon juice and cornstarch.
- Spread the blueberry mixture evenly over the oat base.
- Sprinkle the remaining oat mixture over the blueberries.
- Bake for 25-30 minutes, until the top is golden brown.
- Allow to cool completely before cutting into bars.
