Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix olive oil, minced garlic, chopped rosemary, thyme, salt, and pepper to create an herb rub.
- Pat the beef tenderloin dry with paper towels.
- Brush the tenderloin with Dijon mustard and balsamic vinegar.
- Rub the herb mixture all over the beef, ensuring even coverage.
- Heat an oven-safe skillet over medium-high heat.
- Sear the tenderloin for 2-3 minutes on each side until browned.
- Transfer the skillet to the preheated oven.
- Roast for 15-20 minutes for medium-rare (internal temperature of 135°F/57°C).
- Remove from the oven and let rest for 5-10 minutes before slicing.
- Slice against the grain and serve.
